Food: Autumn Orange & Cinnamon Cake

Official first post of my food category. I am an amateur baker, in fact I am pretty much useless. When my sweet-tooth husband asked me for a sweet treat after dinner, I rummaged through our ‘junk food’ drawer (yes we have one of those ‘shame on us) only to find a bar of chocolate. Feeling utterly un-wifey, I decided to challenge myself and bake! Searched the internet for a fool-proof recipe, tweaked it a little and voila! You can get the real recipe here, however I substituted a few ingredients and added a few of my own too. This is my version.

The method is simple. Whisk the eggs and sugar together until it nearly doubles in size. Gradually add in the oil while continuing to whisk slowly. Then fold in the rest of the ingredients using a spatula minus the orange juice. Once the mixture is smooth, you can add as much orange juice as you prefer, keeping in mind that the mixture shouldn’t get too runny. That’s it. If I can do it, anyone can. With a spicy cup of Chai Tea, this cake is moist and melts in the mouth.
