This deliciously beautiful looking AND tasting salad is exactly what some of you health freaks might be looking for as a lunch option. The salad itself isn’t what makes it but the creamy dressing is so indulgent and fulling, it will definitely get you through the day without feeling peckish. Here’s what you’re going to need…

SALAD INGREDIENTS:

  • A small lettuce head
  • 1/2 large cucumber, spiralized
  • 2 tbsp tinned sweetcorn
  • 1 red bell pepper
  • Handful of Cashew Nuts

TAHINI DRESSING:

  • 2 tbsp Tahini Paste
  • Juice of 1 Lemon
  • 2 tbsp Soy Sauce
  • 1 tsp Sriracha Sauce
  • 1 tsp Red pepper paste
  • 1 tbsp Honey
  • Salt & Pepper to taste

All you need to do now is finely slice the vegetables until they are ever so thin, thin enough to pick them up with chopsticks kind of thin. Mix the dressing ingredients in a blender until smooth. Combine & Enjoy!
